This is one of my favorite things to make in the morning it’s so easy! I normally make these towards the end of the week so that they overflow for the weekend. Everyone loves these little bite size scrambled egg muffins!
What you need:
- Mini Muffin tin
- 3 eggs
- Salt and pepper
- 1/3 milk
What you can add:
- Bell peppers
And pretty much anything else you like to put in your omelette!
Preheat your oven to 350° and then spray your mini muffin tin with cooking spray. Place the three eggs, milk, salt and pepper in the bowl and mix. Cut any extra ingredients that you want to add. Today I used red bell pepper and cheese. When your oven is ready pour eggs into muffin tin. You want the cups to be 3/4 full. Top with added ingredients. Then bake for 15 minutes!
Viola!!!! You have scrambled egg muffins!
