So I totally would’ve never paired blueberry and peanut butter together but it was a request. I’m so glad I went ahead and tried it because all the kids LOVE these. Like I hear mmmmmm throughout breakfast and it’s delightful! These easy to make quesadillas keep making their way into my weekly meal plans so I thought I would share them!
This is the method I used to make all quesadilla be it cheese or any other kind of fruit.
Things you will need
- 2 flour tortillas per quesadilla
- Peanut butter
- Blueberries
- Olive Oil cooking spray, Butter, or margarine
Directions
Preheat your oven to 400°
Spray the pan with your olive oil cooking spray (if using butter or margarine you will just spread it on the back of each tortilla)
Put tortillas on baking sheet
Spread a nice coat of peanut butter on the side of the tortilla facing up
Cut blueberries in half and place desired amount on tortilla
Spread peanut butter on one side of the other tortilla and put peanut butter side down on top of blueberries. Take a spatula and flatten the quesadillas smooshing blueberries
Then spray the tops of the quesadillas with olive oil cooking spray.
Bake for 6-8 minutes. Flip and bake for 6 more minutes.
Tada!! Breakfast is served!! I hope you try these let me know what your kids think!
